Weekend Recap

For once we pretty much had a weekend to ourselves. I can't tell you how long it's been since we didn't have anywhere to be! While we LOVE to stay busy and run, run, run...it's also nice to every once in a while just stick around the house. And that's exactly what we did!

On Friday we just hung out & watched a movie. We also received our Secret Pal gift for February. The theme was "Gift for the parents" and our buddy did a great job of picking out stuff we'd like. She sent lots of goodies to pamper us girls...some bath salts, candles, cucumber & orange eye pads and a very nice album. Of course, I just had to put them to use immediately :) One of the candles was lit within an hour of opening the box and the bath salts & cucumber eye pads were used a little later one. Thank you so much! You're the best!

Saturday I spent the day cleaning a little, organizing some files on my PC, playing with the girls and ending with making some homemade salsa (yes, homemade!) and watching movies with my hubby! Dan & I were craving chips & salsa, and for some reason just decided to try making some ourselves. I'm not big on cooking. I can do it, just don't care to very often. But this was really easy and tasted pretty good. We'll need to do a bit of tweaking when we make it again, but all-in-all it wasn't bad. In case you're interested...here's the recipe.

1 yellow onion, chopped
2-3 jalepenos, chopped (adjust to your tastes)
1 clove garlic, chopped
2T. lime juice
bunch cilantro, washed & chopped
28 oz. diced tomatoes*
14 oz. tomato sauce
salt & pepper to taste

Blend the 1st five ingredients in food processor to chop fine. Add tomatoes, salt & pepper. Blend to desired consistency. Add additional seasonings, if desired.

*I think fresh tomatoes might taste a little better. We'll have to try that next time.

On Sunday we decided to do some shoe shopping for the girls and then go roller skating. We all love to roller skate, and it's been a bit since we've gone. After skating we headed to Dairy Queen for some ice cream. Yummy!

Hope everyone had a great, and maybe even a relaxing, weekend!

  1. Fun weekend! I haven't been roller skating in ages! Your home-made slasa looks tasty, we love chips and slasa at our house. I'll have to give your recipe a try. And Dairy Queen, how yummy!
